- 6 cups (900g) fresh peaches, peeled and sliced

- 3 tbsp (21g) cornstarch
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 0.25 tsp (1.5g) salt
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) rolled oats
- 1 cup (125g) all-purpose flour
- 1 cup (200g) packed brown sugar
- 0.5 cup (113g) unsalted butter, cold and cubed
- 0.5 tsp (2g) ground cinnamon
- 0.25 tsp (1.5g) salt
Instructions:
- Whisk flour, salt, and sugar in a bowl.
- Use a pastry cutter to incorporate chilled butter until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
- Add ice water one tablespoon at a time, stirring until the dough just holds together. Do not overwork.
- Press the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll the dough to fit your deep-dish plate, pressing firmly against the sides. Trim the excess and chill the plate in the freezer while you prep the filling.
- In a large bowl, combine sliced peaches, sugar, and cornstarch.
