Ingredients:

  • 1.5 cups (180g) all-purpose flour
  • 0.5 tsp (3g) salt
  • 1 tbsp (8g) granulated sugar
  • 0.5 cup (113g) unsalted butter, chilled and cubed
  • 6 tbsp (90ml) ice water
  • 6 cups (900g) fresh peaches, peeled and sliced
  • 0.5 cup (100g) granulated sugar
  • 3 tbsp (21g) cornstarch
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 0.25 tsp (1.5g) salt
  • 1 tsp (5ml) vanilla extract
  • 1 cup (90g) rolled oats
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) packed brown sugar
  • 0.5 cup (113g) unsalted butter, cold and cubed
  • 0.5 tsp (2g) ground cinnamon
  • 0.25 tsp (1.5g) salt

Instructions:

  1. Whisk flour, salt, and sugar in a bowl.
  2. Use a pastry cutter to incorporate chilled butter until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
  3. Add ice water one tablespoon at a time, stirring until the dough just holds together. Do not overwork.
  4. Press the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  5. Roll the dough to fit your deep-dish plate, pressing firmly against the sides. Trim the excess and chill the plate in the freezer while you prep the filling.
  6. In a large bowl, combine sliced peaches, sugar, and cornstarch.
