Ingredients:

  • 2 cups fresh blackberries (about 300g)
  • 1/4 cup granulated sugar (50g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon vanilla extract (5ml)
  • Pinch of salt

Instructions:

  1. Rinse the blackberries under cold water and gently pat dry with a paper towel.
  2. In a medium saucepan, combine the blackberries, sugar, lemon juice, vanilla extract, and salt.
  3. Place the saucepan over medium heat. Stir gently to combine and allow the mixture to come to a simmer.
  4. Cook for about 10-15 minutes, stirring occasionally, until the blackberries break down and the mixture thickens slightly.
  5. For a smoother texture, use a fine mesh strainer to pass the compote and discard the seeds (optional).
  6. Remove from heat and let the compote cool to room temperature before transferring it to a jar or container.
  7. Store in the refrigerator for up to one week.
