Ingredients:
- 1 ½ cups (150g) chocolate sandwich cookie crumbs
- ½ cup (115g) unsalted butter, melted
- 8 oz (226g) semi-sweet chocolate, chopped
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- ½ cup (120ml) heavy cream
- 4 cups (960ml) vanilla ice cream, softened slightly
- 1 cup (240ml) heavy whipping cream
- 2 tbsp (30g) powdered sugar
- ¼ cup (60ml) chocolate sauce
- Chocolate shavings (optional)
Instructions:
- Combine cookie crumbs and melted butter in a bowl. Press mixture into the pie dish to form an even crust. Bake at 350°F (175°C) for 10-12 minutes. Cool completely.
- Melt the chopped chocolate in a double boiler or microwave until smooth. Allow to cool slightly. In a bowl, whisk together sugar, eggs, and vanilla extract until combined. Stir in melted chocolate and heavy cream until smooth.
- Pour the chocolate filling into the cooled crust. Chill the pie in the refrigerator for 1 hour until set.
- Spread softened vanilla ice cream over the chilled filling evenly. Smooth the top and freeze for an additional 1 hour.
- Whip heavy cream with powdered sugar until soft peaks form. Spread whipped cream over the frozen pie and drizzle with chocolate sauce.
- Top with chocolate shavings if desired. Cut into slices and serve immediately.
