Ingredients:

  • 1 ½ cups (150g) chocolate sandwich cookie crumbs
  • ½ cup (115g) unsalted butter, melted
  • 8 oz (226g) semi-sweet chocolate, chopped
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • ½ cup (120ml) heavy cream
  • 4 cups (960ml) vanilla ice cream, softened slightly
  • 1 cup (240ml) heavy whipping cream
  • 2 tbsp (30g) powdered sugar
  • ¼ cup (60ml) chocolate sauce
  • Chocolate shavings (optional)

Instructions:

  1. Combine cookie crumbs and melted butter in a bowl. Press mixture into the pie dish to form an even crust. Bake at 350°F (175°C) for 10-12 minutes. Cool completely.
  2. Melt the chopped chocolate in a double boiler or microwave until smooth. Allow to cool slightly. In a bowl, whisk together sugar, eggs, and vanilla extract until combined. Stir in melted chocolate and heavy cream until smooth.
  3. Pour the chocolate filling into the cooled crust. Chill the pie in the refrigerator for 1 hour until set.
  4. Spread softened vanilla ice cream over the chilled filling evenly. Smooth the top and freeze for an additional 1 hour.
  5. Whip heavy cream with powdered sugar until soft peaks form. Spread whipped cream over the frozen pie and drizzle with chocolate sauce.
  6. Top with chocolate shavings if desired. Cut into slices and serve immediately.
