  • ½ cup unsalted butter, chilled and cubed (115g)
  • 4-5 tablespoons ice water
  • 4 large eggs
  • 1 cup heavy cream (240ml)
  • 1 cup cooked ham, diced (150g)
  • 1 cup shredded cheese (such as Gruyère or Cheddar) (110g)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: Fresh herbs (like chives or parsley), chopped

Instructions:

  1. In a mixing bowl, combine flour and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until dough forms. Shape into a disc, wrap in cling film, and chill for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out the chilled dough and place it in the pie pan, trimming edges. Line with baking paper and fill with pie weights. Bake for 15 minutes; remove weights and paper, bake for an additional 10-12 minutes until lightly golden.
  3. In a bowl, whisk together eggs and cream. Stir in mustard, then add ham, cheese, salt, pepper, and herbs if using.
  4. Pour the filling into the pre-baked crust. Bake for 25-30 minutes, or until the filling is set and edges are golden. Cool slightly before slicing.
