Ingredients:
- 1 medium sugar pumpkin (3-4 pounds)
- Water (for steaming or boiling)
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions:
- Cut the sugar pumpkin in half lengthwise.
- Scoop out the seeds and stringy insides using a spoon.
- Place the pumpkin halves cut-side down on a baking sheet. Add a half-inch of water to the sheet and roast at 400°F (200°C) for 45-60 minutes, or until tender.
- Alternatively, place pumpkin halves in a steaming basket or boiling pot, cooking for 30-45 minutes until soft.
- Test the pumpkin with a fork; it should pierce easily.
- Allow the cooked pumpkin to cool slightly.
- Scoop the flesh into a blender or food processor, and blend until smooth.
- Add optional salt and spices for flavor, if desired.
- Transfer to an airtight container, refrigerate if using soon, or freeze for later use.
