Ingredients:

  • 1 medium sugar pumpkin (3-4 pounds)
  • Water (for steaming or boiling)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions:

  1. Cut the sugar pumpkin in half lengthwise.
  2. Scoop out the seeds and stringy insides using a spoon.
  3. Place the pumpkin halves cut-side down on a baking sheet. Add a half-inch of water to the sheet and roast at 400°F (200°C) for 45-60 minutes, or until tender.
  4. Alternatively, place pumpkin halves in a steaming basket or boiling pot, cooking for 30-45 minutes until soft.
  5. Test the pumpkin with a fork; it should pierce easily.
  6. Allow the cooked pumpkin to cool slightly.
  7. Scoop the flesh into a blender or food processor, and blend until smooth.
  8. Add optional salt and spices for flavor, if desired.
  9. Transfer to an airtight container, refrigerate if using soon, or freeze for later use.
