Ingredients:

  • 4 cups (960ml) vanilla ice cream (softened)
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 tablespoon (15ml) coconut oil (or vegetable oil, to thin the chocolate)
  • Chopped nuts (e.g., almonds, hazelnuts) for garnish (optional)
  • Flaky sea salt for a sweet-savory contrast (optional)
  • Sprinkles for a fun touch (optional)

Instructions:

  1. Scoop softened vanilla ice cream into rectangular shapes (about 2 x 4). Place onto the lined baking sheet and freeze for at least 30 minutes.
  2. In a heatproof bowl over a double boiler or microwave, combine chocolate chips and coconut oil. Stir until smooth and melted.
  3. Remove ice cream shapes from the freezer. Dip each bar halfway into the melted chocolate using a spoon or spatula.
  4. Quickly sprinkle chopped nuts or sea salt over the chocolate while still wet. Place back on the baking sheet.
  5. Return to the freezer for an additional 15-20 minutes to allow the chocolate to harden completely.
