Ingredients:
- 4 cups (960ml) vanilla ice cream (softened)
- 1 cup (170g) semi-sweet chocolate chips
- 1 tablespoon (15ml) coconut oil (or vegetable oil, to thin the chocolate)
- Chopped nuts (e.g., almonds, hazelnuts) for garnish (optional)
- Flaky sea salt for a sweet-savory contrast (optional)
- Sprinkles for a fun touch (optional)
Instructions:
- Scoop softened vanilla ice cream into rectangular shapes (about 2 x 4). Place onto the lined baking sheet and freeze for at least 30 minutes.
- In a heatproof bowl over a double boiler or microwave, combine chocolate chips and coconut oil. Stir until smooth and melted.
- Remove ice cream shapes from the freezer. Dip each bar halfway into the melted chocolate using a spoon or spatula.
- Quickly sprinkle chopped nuts or sea salt over the chocolate while still wet. Place back on the baking sheet.
- Return to the freezer for an additional 15-20 minutes to allow the chocolate to harden completely.
