Ingredients:

  • 2 large boneless, skinless chicken breasts (approx. 1 lb / 450g)
  • 1/2 tsp Kosher salt
  • 1/4 tsp Cracked black pepper
  • 1/2 cup (120g) full fat mayonnaise
  • 1/4 cup (60g) sour cream
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika

Instructions:

  1. Pat the chicken pieces thoroughly dry with paper towels to ensure the coating adheres. Season both sides with Kosher salt and black pepper.
  2. In a small mixing bowl, whisk together the mayonnaise, sour cream, garlic powder, onion powder, and smoked paprika. Stir in the grated Parmesan cheese.
  3. Place the chicken on your prepared baking sheet.
  4. Use a spatula to spread the creamy mixture evenly over the top of each chicken breast.
  5. Bake in a preheated oven at 400°F (200°C) for 15 minutes. Check the internal temperature; you are looking for 160°F on the thermometer, as it will climb to 165°F while resting.
