Ingredients:
- 1 lb (450g) ground beef (80% lean recommended)
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 can (15 oz / 425g) corn, drained
- 1 can (16 oz / 450g) salsa (choose your preferred heat level)
- 1 packet (1 oz / 30g) taco seasoning mix
- 9 large corn or flour tortillas
- 2 cups (8 oz / 225g) shredded cheddar cheese
- 1 cup (4 oz / 115g) shredded mozzarella cheese
- ½ cup (120ml) sour cream (optional for layering)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef (no need to brown), black beans, corn, salsa, and taco seasoning. Mix until evenly combined.
- Spread a thin layer of the beef mixture on the bottom of the baking dish.
- Add a layer of tortillas, cutting them as needed to fit.
- Add a generous layer of the beef mixture, then sprinkle with cheddar cheese.
- Repeat layering (tortillas, beef mixture, cheese) until all ingredients are used, finishing with cheese on top.
- If desired, dollop sour cream over the top layer of cheese.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Let the lasagna cool for 5 minutes before slicing and serving.
