Ingredients:

  • 1 lb (450g) ground beef (80% lean recommended)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) corn, drained
  • 1 can (16 oz / 450g) salsa (choose your preferred heat level)
  • 1 packet (1 oz / 30g) taco seasoning mix
  • 9 large corn or flour tortillas
  • 2 cups (8 oz / 225g) shredded cheddar cheese
  • 1 cup (4 oz / 115g) shredded mozzarella cheese
  • ½ cup (120ml) sour cream (optional for layering)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef (no need to brown), black beans, corn, salsa, and taco seasoning. Mix until evenly combined.
  3. Spread a thin layer of the beef mixture on the bottom of the baking dish.
  4. Add a layer of tortillas, cutting them as needed to fit.
  5. Add a generous layer of the beef mixture, then sprinkle with cheddar cheese.
  6. Repeat layering (tortillas, beef mixture, cheese) until all ingredients are used, finishing with cheese on top.
  7. If desired, dollop sour cream over the top layer of cheese.
  8. Cover the dish with aluminum foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Let the lasagna cool for 5 minutes before slicing and serving.
