Ingredients:
- 3 large overripe bananas (approx. 400g)
- 120ml neutral oil
- 150g light brown sugar
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 190g all purpose flour
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 1/2 tsp ground cinnamon
Instructions:
- Preheat oven to 180°C and grease your loaf pan thoroughly.
- Peel the 3 bananas and place them in a large bowl, mashing them with a fork until mostly smooth with a few small lumps.
- Pour in the 120ml neutral oil and 150g light brown sugar, whisking vigorously until the mixture looks glossy and combined.
- Add the 1 egg and 1 tsp vanilla extract, whisking until the egg is fully incorporated and the base is pale.
- Sift in the 190g all purpose flour, 1 tsp baking soda, 1/2 tsp salt, and 1/2 tsp cinnamon directly over the wet mixture.
- Use a spatula to fold the dry ingredients into the wet until no streaks of white flour remain. Do not overmix!
- Pour the batter into your prepared pan and smooth the top with your spatula.
- Bake for 55 minutes until the top is dark golden and a toothpick comes out clean.
- Let the loaf rest in the pan for 10 minutes until the edges pull away slightly from the sides.
- Transfer to a wire rack to cool completely before slicing.
