Ingredients:

  • 3 large overripe bananas (approx. 400g)
  • 120ml neutral oil
  • 150g light brown sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 190g all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat oven to 180°C and grease your loaf pan thoroughly.
  2. Peel the 3 bananas and place them in a large bowl, mashing them with a fork until mostly smooth with a few small lumps.
  3. Pour in the 120ml neutral oil and 150g light brown sugar, whisking vigorously until the mixture looks glossy and combined.
  4. Add the 1 egg and 1 tsp vanilla extract, whisking until the egg is fully incorporated and the base is pale.
  5. Sift in the 190g all purpose flour, 1 tsp baking soda, 1/2 tsp salt, and 1/2 tsp cinnamon directly over the wet mixture.
  6. Use a spatula to fold the dry ingredients into the wet until no streaks of white flour remain. Do not overmix!
  7. Pour the batter into your prepared pan and smooth the top with your spatula.
  8. Bake for 55 minutes until the top is dark golden and a toothpick comes out clean.
  9. Let the loaf rest in the pan for 10 minutes until the edges pull away slightly from the sides.
  10. Transfer to a wire rack to cool completely before slicing.
