Ingredients:

  • 1 cup Elderberry Syrup
  • 2 tbsp Lemon Juice
  • 4 tbsp Beef Gelatin Powder
  • 3 tbsp Raw Honey

Instructions:

  1. The Cold Bloom: Pour 1 cup of elderberry syrup and 2 tbsp of lemon juice into a small saucepan while it is still off the heat.
  2. Sprinkle Technique: Evenly sprinkle 4 tbsp of beef gelatin over the surface of the cold liquid. <small>Note: This prevents gelatin islands or dry clumps in the middle.</small>
  3. The Wait: Let the mixture sit for 5 minutes. Cook 5 mins until it looks like thick, wrinkled applesauce.
  4. Gentle Heat: Turn the stove to low. You want to see the mixture liquefy without ever reaching a simmer or a boil.
  5. Whisk Constantly: Stir for 3–4 minutes until the liquid is smooth, glossy, and no granules remain.
  6. Off Heat Sweetening: Remove the pan from the burner. Whisk in 3 tbsp of raw honey until it is fully incorporated.
  7. Filling the Molds: Use a glass dropper to quickly fill your silicone gummy molds. Work efficiently before the mixture begins to cool and thicken.
  8. The Final Set: Transfer the molds to the refrigerator. Chill for at least 1 hour until the gummies are firm to the touch.
  9. Unmolding: Gently peel the silicone away from the edges and pop the gummies out.
