Ingredients:
- 1/2 cup olive oil
- 1/4 cup fresh lime juice
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds boneless, skinless chicken thighs or breasts
Instructions:
- In a mixing bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper until well combined.
- Place chicken in a zip-top bag or shallow dish
- Preheat the grill to medium-high heat (about 400°F/200°C).
- Remove chicken from the marinade, allowing excess marinade to drip off. Place chicken on the grill and cook for 6-8 minutes per side, or until grill marks appear and chicken is cooked through (internal temperature of 165°F/74°C).
- Remove chicken from the grill and allow it to rest for 5 minutes before slicing. Serve with your favorite sides.
