Ingredients:
- 2 lbs Roma tomatoes, halved lengthwise
- 3 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 4 cloves garlic, smashed
Instructions:
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper. Note: High heat is non negotiable for the char.
- Place the halved Roma tomatoes cut side up on the sheet.
- Drizzle with olive oil and sprinkle evenly with salt and pepper.
- Scatter smashed garlic cloves around the tomatoes.
- Roast for 35-45 minutes until the edges are shriveled and the skins look blistered.
- Switch to the broiler for the last 2-3 minutes until you see a deep mahogany char on the tops.
- Remove from heat and let the Fire Roasted Roma Tomatoes cool for 5-10 minutes.
- Gently slip off the charred skins using your fingers or a knife.
- Roughly chop the flesh if you want a diced texture.
