Ingredients:

  • 2 lbs Roma tomatoes, halved lengthwise
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 4 cloves garlic, smashed

Instructions:

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper. Note: High heat is non negotiable for the char.
  2. Place the halved Roma tomatoes cut side up on the sheet.
  3. Drizzle with olive oil and sprinkle evenly with salt and pepper.
  4. Scatter smashed garlic cloves around the tomatoes.
  5. Roast for 35-45 minutes until the edges are shriveled and the skins look blistered.
  6. Switch to the broiler for the last 2-3 minutes until you see a deep mahogany char on the tops.
  7. Remove from heat and let the Fire Roasted Roma Tomatoes cool for 5-10 minutes.
  8. Gently slip off the charred skins using your fingers or a knife.
  9. Roughly chop the flesh if you want a diced texture.
