Ingredients:
- 2 cups (200 g) almond flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 large eggs
- ½ cup (120 ml) milk (dairy or plant-based)
- 2 tablespoons (30 g) honey or maple syrup
- 1 teaspoon vanilla extract
- Maple syrup (optional)
- Fresh berries (optional)
- Sliced bananas (optional)
- Whipped cream (optional)
Instructions:
- In a large bowl, combine almond flour, baking powder, baking soda, and salt. Whisk until well combined.
- In another bowl, beat the eggs. Add milk, honey (or maple syrup), and vanilla extract. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
- Preheat a non-stick skillet over medium heat. Lightly grease with cooking spray or a small amount of butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 2-3 minutes until golden brown.
- Serve immediately with maple syrup, fresh berries, or your favorite toppings.
