Ingredients:

  • 2 cups (200 g) almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 large eggs
  • ½ cup (120 ml) milk (dairy or plant-based)
  • 2 tablespoons (30 g) honey or maple syrup
  • 1 teaspoon vanilla extract
  • Maple syrup (optional)
  • Fresh berries (optional)
  • Sliced bananas (optional)
  • Whipped cream (optional)

Instructions:

  1. In a large bowl, combine almond flour, baking powder, baking soda, and salt. Whisk until well combined.
  2. In another bowl, beat the eggs. Add milk, honey (or maple syrup), and vanilla extract. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
  4. Preheat a non-stick skillet over medium heat. Lightly grease with cooking spray or a small amount of butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 2-3 minutes until golden brown.
  6. Serve immediately with maple syrup, fresh berries, or your favorite toppings.
