Ingredients:
- 1 lb lean ground beef
- 2 tbsp olive oil
- 3 tbsp taco seasoning
- 1/2 cup water
- 1/2 tsp salt
- 12 oz thick-cut corn tortilla chips
- 2 cups sharp cheddar cheese, shredded
- 2 cups Monterey Jack cheese, shredded
Instructions:
- Heat olive oil in the skillet over medium-high heat until shimmering.
- Add the ground beef, breaking it apart with a spatula, and cook until mahogany-brown and fully cooked through.
- Drain excess fat, then stir in the taco seasoning, salt, and water.
- Simmer for 3–5 minutes until the liquid has reduced into a thick, velvety glaze that coats the meat. Remove from heat.
- Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.
- Spread half of the tortilla chips in an even layer across the pan.
- Sprinkle half of the combined cheddar and Monterey Jack cheeses over the chips.
- Evenly distribute the seasoned ground beef over the cheese.
- Top with the remaining chips, followed by the remaining cheese.
- Place the pan in the center rack of the oven and bake until the cheese is bubbly and melted.
