Ingredients:
- 2 cups fresh peas (300g) or frozen peas, thawed
- 1 cup thinly sliced radishes (100g)
- 1/2 cup crumbled feta cheese (75g)
- 1/4 cup fresh mint leaves, chopped (10g)
- 2 tablespoons olive oil (30ml)
- 1 tablespoon lemon juice (15ml)
- Salt and pepper to taste
Instructions:
- Bring a medium saucepan of water to a boil.
- Add the peas and cook for 2 minutes until bright green.
- Drain in a colander and rinse under cold water to halt cooking.
- Thinly slice radishes and chop mint leaves.
- In a large mixing bowl, combine the blanched peas, radishes, and mint.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad mixture and toss gently to coat.
- Add crumbled feta and give it another light toss.
- Serve immediately or chill in the fridge for 15 minutes for a cooler flavor.
