Ingredients:

  • 2 cups fresh peas (300g) or frozen peas, thawed
  • 1 cup thinly sliced radishes (100g)
  • 1/2 cup crumbled feta cheese (75g)
  • 1/4 cup fresh mint leaves, chopped (10g)
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon lemon juice (15ml)
  • Salt and pepper to taste

Instructions:

  1. Bring a medium saucepan of water to a boil.
  2. Add the peas and cook for 2 minutes until bright green.
  3. Drain in a colander and rinse under cold water to halt cooking.
  4. Thinly slice radishes and chop mint leaves.
  5. In a large mixing bowl, combine the blanched peas, radishes, and mint.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Drizzle the dressing over the salad mixture and toss gently to coat.
  8. Add crumbled feta and give it another light toss.
  9. Serve immediately or chill in the fridge for 15 minutes for a cooler flavor.
