Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound ground beef (450g)
  • 1 medium onion, chopped (1 medium)
  • 2 cloves garlic, minced (2 cloves)
  • 1 (15 ounce) can kidney beans, rinsed and drained (425g)
  • 1 (15 ounce) can pinto beans, rinsed and drained (425g)
  • 1 (14.5 ounce) can diced tomatoes, undrained (410g)
  • 1 (8 ounce) can tomato sauce (225g)
  • 1 packet chili seasoning (about 1 ounce/30g)
  • 1/2 cup water (120 ml)
  • Salt and black pepper to taste
  • 4 (2 ounce) bags Fritos corn chips (approximately 55g per bag)
  • 1 cup shredded cheddar cheese (or your favorite cheese blend) (115g)
  • Optional Toppings: Diced onion, sour cream, sliced jalapeños, guacamole, hot sauce

Instructions:

  1. Brown ground beef in a large skillet, drain excess fat. Add onion and garlic, sauté until softened. Stir in beans, diced tomatoes, tomato sauce, chili seasoning, water, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until thickened. (Skip to step 2 if using canned chili)
  2. Heat chili in a saucepan over medium heat until warmed through.
  3. Gently crush the Fritos inside each bag.
  4. Spoon chili into each bag of Fritos, filling about halfway.
  5. Sprinkle cheddar cheese over the chili in each bag.
  6. Microwave each bag (open at the top!) for 30-45 seconds, or until the cheese is melted and gooey. (alternatively, you can put the filled frito bags on a baking sheet and put them in the oven until the cheese is melted)
  7. Top with your favorite toppings, such as diced onion, sour cream, jalapeños, and hot sauce.
  8. Enjoy your Frito Pie straight from the bag with a spoon!
