Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound ground beef (450g)
- 1 medium onion, chopped (1 medium)
- 2 cloves garlic, minced (2 cloves)
- 1 (15 ounce) can kidney beans, rinsed and drained (425g)
- 1 (15 ounce) can pinto beans, rinsed and drained (425g)
- 1 (14.5 ounce) can diced tomatoes, undrained (410g)
- 1 (8 ounce) can tomato sauce (225g)
- 1 packet chili seasoning (about 1 ounce/30g)
- 1/2 cup water (120 ml)
- Salt and black pepper to taste
- 4 (2 ounce) bags Fritos corn chips (approximately 55g per bag)
- 1 cup shredded cheddar cheese (or your favorite cheese blend) (115g)
- Optional Toppings: Diced onion, sour cream, sliced jalapeños, guacamole, hot sauce
Instructions:
- Brown ground beef in a large skillet, drain excess fat. Add onion and garlic, sauté until softened. Stir in beans, diced tomatoes, tomato sauce, chili seasoning, water, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until thickened. (Skip to step 2 if using canned chili)
- Heat chili in a saucepan over medium heat until warmed through.
- Gently crush the Fritos inside each bag.
- Spoon chili into each bag of Fritos, filling about halfway.
- Sprinkle cheddar cheese over the chili in each bag.
- Microwave each bag (open at the top!) for 30-45 seconds, or until the cheese is melted and gooey. (alternatively, you can put the filled frito bags on a baking sheet and put them in the oven until the cheese is melted)
- Top with your favorite toppings, such as diced onion, sour cream, jalapeños, and hot sauce.
- Enjoy your Frito Pie straight from the bag with a spoon!
