Ingredients:

  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 4 pieces white fish fillets (about 1 pound or 450 g total)
  • 1 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup buttermilk
  • Oil for frying

Instructions:

  1. In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, black pepper, dried thyme, and salt to prepare the Hillbilly Seasoning.
  2. Pat fish fillets dry with paper towels and sprinkle both sides generously with the seasoning mix, allowing to sit for 30 minutes.
  3. Place flour in one shallow dish and whisk together the beaten egg and buttermilk in another dish until smooth.
  4. Dredge each seasoned fillet first in the flour, shaking off excess, then in the egg mixture, and finally back in the flour.
  5. In a skillet or deep fryer, heat oil to 350°F (175°C), ensuring enough oil to submerge the fish halfway.
  6. Carefully place the fish in the hot oil, frying for 4-5 minutes per side until golden brown and cooked through.
  7. Remove fish using tongs or a slotted spoon, allowing excess oil to drain on paper towels.
  8. Serve hot, garnished with lemon wedges if desired.
