Ingredients:
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 4 pieces white fish fillets (about 1 pound or 450 g total)
- 1 cup all-purpose flour
- 1 egg, beaten
- 1 cup buttermilk
- Oil for frying
Instructions:
- In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, black pepper, dried thyme, and salt to prepare the Hillbilly Seasoning.
- Pat fish fillets dry with paper towels and sprinkle both sides generously with the seasoning mix, allowing to sit for 30 minutes.
- Place flour in one shallow dish and whisk together the beaten egg and buttermilk in another dish until smooth.
- Dredge each seasoned fillet first in the flour, shaking off excess, then in the egg mixture, and finally back in the flour.
- In a skillet or deep fryer, heat oil to 350°F (175°C), ensuring enough oil to submerge the fish halfway.
- Carefully place the fish in the hot oil, frying for 4-5 minutes per side until golden brown and cooked through.
- Remove fish using tongs or a slotted spoon, allowing excess oil to drain on paper towels.
- Serve hot, garnished with lemon wedges if desired.
