Ingredients:

  • 1 lb fresh strawberries (approx. 20-24 medium berries)
  • 10 oz high-quality dark chocolate (60% cacao or higher), finely chopped
  • 1 tsp refined coconut oil
  • 2 oz white chocolate or salted caramel chips

Instructions:

  1. Wash the 1 lb of strawberries carefully, keeping the green tops intact.
  2. Lay them on paper towels for at least 30 minutes until the skin feels completely matte and dry. Note: Any moisture will cause the chocolate to seize or fall off.
  3. Finely shave the 10 oz of dark chocolate using a serrated knife.
  4. Place two thirds of the dark chocolate and 1 tsp of coconut oil in a glass bowl.
  5. Microwave in 20 second bursts, stirring vigorously between each, until the mixture is velvety and smooth.
  6. Stir in the remaining third of the chopped chocolate. Continue stirring until the solid pieces have completely vanished.
  7. Hold a strawberry by the green leaves and swirl it in the chocolate, coating it about three quarters of the way up.
  8. Lift the berry and let the excess chocolate drip back into the bowl for a few seconds.
  9. Place the berry gently on the parchment paper. Repeat with all berries.
  10. Melt the 2 oz of white chocolate or caramel chips, then use a spoon or piping bag to create delicate lines until the berries look like a gallery display.
