Ingredients:
- 1 lb fresh strawberries (approx. 20-24 medium berries)
- 10 oz high-quality dark chocolate (60% cacao or higher), finely chopped
- 1 tsp refined coconut oil
- 2 oz white chocolate or salted caramel chips
Instructions:
- Wash the 1 lb of strawberries carefully, keeping the green tops intact.
- Lay them on paper towels for at least 30 minutes until the skin feels completely matte and dry. Note: Any moisture will cause the chocolate to seize or fall off.
- Finely shave the 10 oz of dark chocolate using a serrated knife.
- Place two thirds of the dark chocolate and 1 tsp of coconut oil in a glass bowl.
- Microwave in 20 second bursts, stirring vigorously between each, until the mixture is velvety and smooth.
- Stir in the remaining third of the chopped chocolate. Continue stirring until the solid pieces have completely vanished.
- Hold a strawberry by the green leaves and swirl it in the chocolate, coating it about three quarters of the way up.
- Lift the berry and let the excess chocolate drip back into the bowl for a few seconds.
- Place the berry gently on the parchment paper. Repeat with all berries.
- Melt the 2 oz of white chocolate or caramel chips, then use a spoon or piping bag to create delicate lines until the berries look like a gallery display.
