- 1.5 lbs boneless skinless chicken thighs

- 3/4 cup arborio rice
- 3 large eggs, room temperature
- 1/2 cup fresh lemon juice
- 1 tsp lemon zest
Instructions:
- Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 6–8 minutes until the vegetables are softened and the onions are translucent. Note: This creates the sweet flavor base.
- Add the minced garlic and cook for exactly 60 seconds until the kitchen smells incredibly fragrant. Do not let it brown, or it will turn bitter.
- Pour in the chicken stock and bring the mixture to a rolling boil. Once boiling, add the chicken thighs and the arborio rice.
- Reduce the heat to low, cover the pot, and simmer for 15–20 minutes until the rice is tender and the chicken is cooked through.
- Remove the chicken to a clean plate. Using two forks, shred the meat into bite-sized pieces. Return the shredded chicken to the pot.
- Turn off the heat entirely. This is a critical step to prevent the eggs from curdling later.
- Whisk the eggs in a medium bowl for about 2 minutes until they are frothy and pale yellow. Whisk in the lemon juice and the fresh zest.
- Begin the tempering: Slowly drizzle 2 cups of the hot broth into the egg mixture while whisking constantly. Note: This slowly raises the temperature of the eggs so they don't scramble.
- Combine the mixtures: Gradually pour the warmed egg mixture back into the main pot, stirring gently until the soup thickens and turns a beautiful creamy yellow.
- Taste and adjust: Add salt or extra lemon if you want more zing, then serve immediately.
