Ingredients:

  • 1.5 lbs boneless skinless chicken thighs
  • 8 cups low-sodium chicken stock
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, finely diced
  • 2 stalks celery, finely diced
  • 3 cloves garlic, minced
  • 3/4 cup arborio rice
  • 3 large eggs, room temperature
  • 1/2 cup fresh lemon juice
  • 1 tsp lemon zest

Instructions:

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 6–8 minutes until the vegetables are softened and the onions are translucent. Note: This creates the sweet flavor base.
  2. Add the minced garlic and cook for exactly 60 seconds until the kitchen smells incredibly fragrant. Do not let it brown, or it will turn bitter.
  3. Pour in the chicken stock and bring the mixture to a rolling boil. Once boiling, add the chicken thighs and the arborio rice.
  4. Reduce the heat to low, cover the pot, and simmer for 15–20 minutes until the rice is tender and the chicken is cooked through.
  5. Remove the chicken to a clean plate. Using two forks, shred the meat into bite-sized pieces. Return the shredded chicken to the pot.
  6. Turn off the heat entirely. This is a critical step to prevent the eggs from curdling later.
  7. Whisk the eggs in a medium bowl for about 2 minutes until they are frothy and pale yellow. Whisk in the lemon juice and the fresh zest.
  8. Begin the tempering: Slowly drizzle 2 cups of the hot broth into the egg mixture while whisking constantly. Note: This slowly raises the temperature of the eggs so they don't scramble.
  9. Combine the mixtures: Gradually pour the warmed egg mixture back into the main pot, stirring gently until the soup thickens and turns a beautiful creamy yellow.
  10. Taste and adjust: Add salt or extra lemon if you want more zing, then serve immediately.
