Ingredients:

  • 2 cups (60 g) fresh spinach
  • 1 medium cucumber, peeled and chopped (about 300 g)
  • 1 medium apple, cored and chopped (about 180 g)
  • 1 ripe banana (about 120 g)
  • ½ avocado (about 75 g)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 2 cups (480 ml) coconut water or cold water
  • A handful of fresh mint leaves (about 5-10 leaves)
  • Optional: 1 tablespoon honey or agave syrup (15 ml)

Instructions:

  1. Wash all the greens and chop the cucumber, apple, banana, and avocado.
  2. Place spinach, cucumber, apple, banana, and avocado into the blender.
  3. Pour in coconut water (or cold water) and add lemon juice.
  4. Blend on high until smooth and creamy, stopping to scrape down the sides if needed.
  5. Taste the smoothie; if desired, add honey or agave syrup and blend again.
  6. Pour into glasses and garnish with mint leaves. Serve immediately!
