Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
  • 3 tablespoons olive oil (45 ml)
  • 2 tablespoons lime juice (30 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • Salt and pepper to taste
  • 2 ripe mangoes, peeled and diced (about 2 cups or 300 g)
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional for heat)
  • 1/4 cup fresh cilantro, chopped (15 g)
  • 1 lime, juiced
  • Salt to taste

Instructions:

  1. In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for 30 minutes.
  2. In a separate bowl, combine diced mangoes, chopped red onion, minced jalapeño (if using), cilantro, lime juice, and salt. Toss gently to mix.
  3. Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
  4. Remove chicken from the marinade, letting excess drip off. Place on the grill. Grill for 5-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Remove chicken from the grill and let it rest for a few minutes. Top with fresh mango salsa before serving.
