Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
- 3 tablespoons olive oil (45 ml)
- 2 tablespoons lime juice (30 ml)
- 2 cloves garlic, minced
- 1 teaspoon ground cumin (5 g)
- 1 teaspoon smoked paprika (5 g)
- Salt and pepper to taste
- 2 ripe mangoes, peeled and diced (about 2 cups or 300 g)
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and minced (optional for heat)
- 1/4 cup fresh cilantro, chopped (15 g)
- 1 lime, juiced
- Salt to taste
Instructions:
- In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for 30 minutes.
- In a separate bowl, combine diced mangoes, chopped red onion, minced jalapeño (if using), cilantro, lime juice, and salt. Toss gently to mix.
- Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
- Remove chicken from the marinade, letting excess drip off. Place on the grill. Grill for 5-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove chicken from the grill and let it rest for a few minutes. Top with fresh mango salsa before serving.
