Ingredients:

  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice (freshly squeezed)
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried)
  • 1 teaspoon allspice (ground)
  • 1 teaspoon cinnamon (ground)
  • 1 teaspoon nutmeg (ground)
  • 2-4 Scotch bonnet peppers (adjust to taste), chopped
  • Salt and black pepper to taste
  • 2 pounds pork shoulder or pork loin, cut into steaks or chunks

Instructions:

  1. In a large bowl, combine soy sauce, olive oil, brown sugar, lime juice, garlic, onion, thyme, allspice, cinnamon, nutmeg, Scotch bonnet peppers, salt, and black pepper. Whisk ingredients until well blended.
  2. Submerge the pork in the marinade. Cover with a zip-top bag or container. Refrigerate for at least 1 hour (or up to overnight for more flavor).
  3. Preheat the grill to medium-high heat (about 400°F/200°C).
  4. Remove pork from marinade and allow excess to drip off. Grill the pork for about 4-5 minutes per side, or until internal temperature reaches 145°F (63°C). Add a few minutes if you prefer a more charred exterior.
  5. Remove from grill and let rest for 5 minutes. Slice and serve with your chosen sides.
