Ingredients:
- 1/4 cup soy sauce
- 1/4 cup olive oil
- 2 tablespoons brown sugar
- 2 tablespoons lime juice (freshly squeezed)
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried)
- 1 teaspoon allspice (ground)
- 1 teaspoon cinnamon (ground)
- 1 teaspoon nutmeg (ground)
- 2-4 Scotch bonnet peppers (adjust to taste), chopped
- Salt and black pepper to taste
- 2 pounds pork shoulder or pork loin, cut into steaks or chunks
Instructions:
- In a large bowl, combine soy sauce, olive oil, brown sugar, lime juice, garlic, onion, thyme, allspice, cinnamon, nutmeg, Scotch bonnet peppers, salt, and black pepper. Whisk ingredients until well blended.
- Submerge the pork in the marinade. Cover with a zip-top bag or container. Refrigerate for at least 1 hour (or up to overnight for more flavor).
- Preheat the grill to medium-high heat (about 400°F/200°C).
- Remove pork from marinade and allow excess to drip off. Grill the pork for about 4-5 minutes per side, or until internal temperature reaches 145°F (63°C). Add a few minutes if you prefer a more charred exterior.
- Remove from grill and let rest for 5 minutes. Slice and serve with your chosen sides.
