Ingredients:
- 1 lb lean ground beef (90/10)
- 6 cloves fresh garlic, minced
- 1 large yellow onion
- 1 tbsp fresh ginger
- 3 cups cooked jasmine rice, chilled
- 3 tbsp low-sodium soy sauce
- 1 tbsp toasted sesame oil
- 1 tsp brown sugar
- 2 stalks green onions, sliced
Instructions:
- Preheat the skillet. Set your pan over medium high heat for 3 minutes. Note: A hot pan prevents the beef from sticking and jumping straight to steaming.
- Brown the beef. Add 1 lb lean ground beef to the dry pan. Cook 5 mins until deeply browned and sizzle crisp.
- Drain the excess. Tilt the pan and spoon out most of the liquid fat. Note: Leaving about 1 teaspoon helps fry the aromatics.
- Sauté the aromatics. Stir in 1 large yellow onion and 1 tbsp fresh ginger. Cook 2 mins until onion is translucent.
- Add the garlic. Toss in those 6 cloves of fresh garlic. Cook 1 min until fragrant but not browned.
- Incorporate the rice. Break up 3 cups chilled jasmine rice and add to the pan. Note: Cold rice grains stay separate and fry instead of steaming.
- Season the mix. Pour in 3 tbsp low sodium soy sauce, 1 tbsp toasted sesame oil, and 1 tsp brown sugar.
- Final sear. Press the mixture down with a spatula for 1 minute. Cook until the bottom layer starts to crackle.
- Garnish and serve. Remove from heat and stir in 2 stalks of sliced green onions.
