Ingredients:
- 3 medium ripe bananas (about 300g)
- 2 large eggs
- 1/4 cup (60ml) melted coconut oil or unsalted butter
- 1 teaspoon vanilla extract
- 2 cups (240g) almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 cup (50g) honey or maple syrup (optional, for extra sweetness)
- 1/2 cup (75g) chopped walnuts or pecans (optional)
- 1/2 cup (90g) dark chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- Grease the loaf pan with oil or line it with parchment paper for easy removal.
- In a large bowl, mash the ripe bananas until smooth.
- Add eggs, melted coconut oil (or butter), and vanilla extract to the bananas. Whisk until combined.
- In a separate bowl, mix almond flour, baking soda, salt, and cinnamon (if using).
- Gradually add dry ingredients to the wet mixture, stirring with a rubber spatula until just combined. Optionally, fold in nuts or chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
