Ingredients:
- 1 lb (450 g) ground beef or turkey
- 1 medium onion, diced (about 1 cup / 150 g)
- 2 cloves garlic, minced
- 2 medium bell peppers, diced (red and green for color)
- 1 can (14.5 oz / 400 g) diced tomatoes (with juice)
- 4 cups (1 L) low-sodium chicken or vegetable broth
- 1 cup (185 g) cooked rice (white or brown)
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Grated cheese (e.g., cheddar or mozzarella)
- Crusty bread or rolls
Instructions:
- Heat a large pot over medium heat. Add the ground meat, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.
- Add diced onion and minced garlic to the pot. Cook until the onion is translucent (about 3-4 minutes).
- Stir in the diced bell peppers and cook for another 3-4 minutes.
- Add the diced tomatoes, broth, cooked rice, Italian seasoning, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Taste the soup and make any final adjustments with salt and pepper.
- Ladle the soup into bowls and top with grated cheese and parsley if desired.
