Ingredients:

  • 1 lb (450 g) ground beef or turkey
  • 1 medium onion, diced (about 1 cup / 150 g)
  • 2 cloves garlic, minced
  • 2 medium bell peppers, diced (red and green for color)
  • 1 can (14.5 oz / 400 g) diced tomatoes (with juice)
  • 4 cups (1 L) low-sodium chicken or vegetable broth
  • 1 cup (185 g) cooked rice (white or brown)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Grated cheese (e.g., cheddar or mozzarella)
  • Crusty bread or rolls

Instructions:

  1. Heat a large pot over medium heat. Add the ground meat, and cook until browned (about 5-7 minutes). Drain excess fat if necessary.
  2. Add diced onion and minced garlic to the pot. Cook until the onion is translucent (about 3-4 minutes).
  3. Stir in the diced bell peppers and cook for another 3-4 minutes.
  4. Add the diced tomatoes, broth, cooked rice, Italian seasoning, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Taste the soup and make any final adjustments with salt and pepper.
  7. Ladle the soup into bowls and top with grated cheese and parsley if desired.
