- 1 cup coconut oil, melted
- 1 teaspoon vanilla extract
- Granulated sugar for sprinkling (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, powdered sugar, and salt.
- In a separate bowl, combine the melted coconut oil and vanilla extract.
- Gradually add the wet ingredients to the dry, stirring until a crumbly dough forms.
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Cut into desired shapes.
- Place the cookies on a baking sheet lined with parchment paper. Sprinkle with granulated sugar if desired.
- Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
