Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • Granulated sugar for sprinkling (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, powdered sugar, and salt.
  3. In a separate bowl, combine the melted coconut oil and vanilla extract.
  4. Gradually add the wet ingredients to the dry, stirring until a crumbly dough forms.
  5. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  6. Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Cut into desired shapes.
  7. Place the cookies on a baking sheet lined with parchment paper. Sprinkle with granulated sugar if desired.
  8. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
