Ingredients:
- 1 (8 oz) package cream cheese, softened (225 g)
- ½ cup Greek yogurt (120 ml)
- 1 medium cucumber, finely diced (about 1 cup, 150 g)
- 1 small red bell pepper, finely diced (about ½ cup, 75 g)
- ¼ cup finely chopped red onion (40 g)
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- Zest of 1 lemon
- 1 tablespoon freshly squeezed lemon juice
- Salt and pepper to taste
Instructions:
- Finely dice cucumber, red bell pepper, and red onion.
- In a mixing bowl, combine the softened cream cheese and Greek yogurt.
- Add the chopped cucumber, bell pepper, and onion to the cream cheese mixture.
- Fold in the chopped chives, parsley, dill, lemon zest, and lemon juice. Season with salt and pepper to taste.
- For a smoother spread, pulse the mixture in a food processor.
- Cover and refrigerate for at least 30 minutes for flavors to meld.
- Spread on bagels, crackers, or serve with fresh vegetables.
