Ingredients:

  • 1 (8 oz) package cream cheese, softened (225 g)
  • ½ cup Greek yogurt (120 ml)
  • 1 medium cucumber, finely diced (about 1 cup, 150 g)
  • 1 small red bell pepper, finely diced (about ½ cup, 75 g)
  • ¼ cup finely chopped red onion (40 g)
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Zest of 1 lemon
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions:

  1. Finely dice cucumber, red bell pepper, and red onion.
  2. In a mixing bowl, combine the softened cream cheese and Greek yogurt.
  3. Add the chopped cucumber, bell pepper, and onion to the cream cheese mixture.
  4. Fold in the chopped chives, parsley, dill, lemon zest, and lemon juice. Season with salt and pepper to taste.
  5. For a smoother spread, pulse the mixture in a food processor.
  6. Cover and refrigerate for at least 30 minutes for flavors to meld.
  7. Spread on bagels, crackers, or serve with fresh vegetables.
