Ingredients:

  • 2 lb salmon side or individual fillets
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 large lemon, zested and sliced into rounds

Instructions:

  1. Preheat the oven to 450°F (230°C), positioning the rack in the upper-middle section.
  2. Line a large rimmed baking sheet with parchment paper or oiled foil. For maximum crispness, preheat the empty pan in the oven before lining it.
  3. Pat the salmon completely dry with paper towels. Rub the olive oil across the flesh, then apply the salt, pepper, and garlic powder.
  4. Top the fillets with lemon zest and place lemon slices directly on the salmon.
  5. Bake for 12 to 16 minutes, or until the edges are deep golden brown and the internal temperature reaches 130°F to 135°F.
  6. Remove from oven and let the salmon rest for 5 minutes to allow juices to redistribute.
