Ingredients:
- 2 lb salmon side or individual fillets
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 large lemon, zested and sliced into rounds
Instructions:
- Preheat the oven to 450°F (230°C), positioning the rack in the upper-middle section.
- Line a large rimmed baking sheet with parchment paper or oiled foil. For maximum crispness, preheat the empty pan in the oven before lining it.
- Pat the salmon completely dry with paper towels. Rub the olive oil across the flesh, then apply the salt, pepper, and garlic powder.
- Top the fillets with lemon zest and place lemon slices directly on the salmon.
- Bake for 12 to 16 minutes, or until the edges are deep golden brown and the internal temperature reaches 130°F to 135°F.
- Remove from oven and let the salmon rest for 5 minutes to allow juices to redistribute.
