Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1/4 cup (60g) low-sugar marinara sauce
- 1/2 tsp dried oregano
- 1/4 tsp garlic powder
- 1 pinch red pepper flakes
- 1/4 cup (28g) shredded part-skim mozzarella cheese
- 10 slices turkey pepperoni
- 1 tbsp freshly grated Parmesan cheese
- 1 tbsp fresh basil leaves
Instructions:
- Measure 1 cup (225g) of low-fat cottage cheese into a microwave safe bowl. Note: Use a wide bowl to increase the surface area for the toppings.
- Stir in 1/2 tsp dried oregano, 1/4 tsp garlic powder, and a pinch of red pepper flakes into the cheese. Note: Mixing seasonings into the cheese ensures every bite is flavorful.
- Spread 1/4 cup (60g) of low sugar marinara sauce directly over the top of the cottage cheese. Note: Do not stir the sauce in if you want distinct pizza layers.
- Sprinkle 1/4 cup (28g) of shredded part skim mozzarella cheese evenly over the marinara layer.
- Place 10 slices of turkey pepperoni on top of the mozzarella until they cover the surface.
- Microwave on high for 1 minute 30 seconds to 2 minutes until the mozzarella is bubbling and the pepperoni is slightly curled.
- Carefully remove the bowl (it will be hot!) and sprinkle with 1 tbsp freshly grated Parmesan cheese.
- Top with 1 tbsp fresh basil leaves until the aroma fills the kitchen.
