Ingredients:

  • 8 ounces (225g) extra-sharp cheddar cheese, grated
  • 4 ounces (115g) sharp cheddar cheese, grated
  • 4 ounces (115g) Monterey Jack cheese, grated
  • 1 cup (237ml) mayonnaise, full-fat
  • 4 ounces (115g) cream cheese, softened
  • 4 ounces (115g) pimentos, drained and diced
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Combine all the grated cheeses in a large mixing bowl.
  2. In a separate bowl, beat the softened cream cheese until smooth. Gradually whisk in the mayonnaise until fully combined.
  3. Add the cream cheese mixture to the grated cheese mixture.
  4. Stir in the diced pimentos, Worcestershire sauce, garlic powder, cayenne pepper (if using), and smoked paprika.
  5. Season with salt and pepper to taste. Give it a good stir and taste. Adjust seasoning as needed.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve with your favorite crackers, vegetables, or bread for the best pimento cheese dip.
