Ingredients:
- 8 ounces (225g) extra-sharp cheddar cheese, grated
- 4 ounces (115g) sharp cheddar cheese, grated
- 4 ounces (115g) Monterey Jack cheese, grated
- 1 cup (237ml) mayonnaise, full-fat
- 4 ounces (115g) cream cheese, softened
- 4 ounces (115g) pimentos, drained and diced
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
Instructions:
- Combine all the grated cheeses in a large mixing bowl.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually whisk in the mayonnaise until fully combined.
- Add the cream cheese mixture to the grated cheese mixture.
- Stir in the diced pimentos, Worcestershire sauce, garlic powder, cayenne pepper (if using), and smoked paprika.
- Season with salt and pepper to taste. Give it a good stir and taste. Adjust seasoning as needed.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve with your favorite crackers, vegetables, or bread for the best pimento cheese dip.
