Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/4 cup (50g) granulated sugar
- 1/2 cup (120ml) whole milk
- 2 large eggs, beaten
- 1 tsp vanilla extract
- 1/4 cup (60g) unsalted butter, melted
- 2 medium apples, peeled, cored, and diced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 2 tbsp (30g) brown sugar
- Vegetable oil for frying, approximately 4 cups
- 1 cup (120g) powdered sugar
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
Instructions:
- Toss diced apples with lemon juice, brown sugar, and cinnamon. Set aside.
- In a bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
- In another bowl, mix milk, beaten eggs, melted butter, and vanilla.
- Combine the wet and dry ingredients until just mixed; fold in the prepared apples.
- Cover the bowl with a kitchen towel and let the dough rest for about 30 minutes.
- In a large pot, heat vegetable oil over medium heat to 350°F (175°C).
- Using a spoon or a cookie scoop, drop spoonfuls of dough into the hot oil. Fry in batches for 2-3 minutes on each side, until golden brown.
- Remove fritters with a slotted spoon and drain on paper towels.
- Whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over cooled fritters.
