Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (120ml) whole milk
  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 1/4 cup (60g) unsalted butter, melted
  • 2 medium apples, peeled, cored, and diced
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 2 tbsp (30g) brown sugar
  • Vegetable oil for frying, approximately 4 cups
  • 1 cup (120g) powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Toss diced apples with lemon juice, brown sugar, and cinnamon. Set aside.
  2. In a bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
  3. In another bowl, mix milk, beaten eggs, melted butter, and vanilla.
  4. Combine the wet and dry ingredients until just mixed; fold in the prepared apples.
  5. Cover the bowl with a kitchen towel and let the dough rest for about 30 minutes.
  6. In a large pot, heat vegetable oil over medium heat to 350°F (175°C).
  7. Using a spoon or a cookie scoop, drop spoonfuls of dough into the hot oil. Fry in batches for 2-3 minutes on each side, until golden brown.
  8. Remove fritters with a slotted spoon and drain on paper towels.
  9. Whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over cooled fritters.
