Ingredients:

  • 2 cups all-purpose flour (250g)
  • 1/2 teaspoon sea salt (3g)
  • 1 teaspoon granulated sugar or honey (5g)
  • 3 tablespoons olive oil (45ml)
  • 2/3 cup water (160ml)
  • 2 tablespoons everything bagel seasoning
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh rosemary, finely minced
  • 1 teaspoon flaky Maldon salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 cup finely grated Parmesan cheese (25g)
  • 1 teaspoon dried thyme

Instructions:

  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, salt, sugar, and any 'in-dough' seasonings from your chosen flavor variation.
  3. Create a well in the center and add the olive oil and water. Stir with a spatula until a shaggy dough forms, then lightly knead in the bowl for 30 seconds until smooth.
  4. Place the dough directly onto a sheet of parchment paper. Roll it out using a rolling pin until it is paper-thin (about 1/16th of an inch).
  5. Dock the dough by pricking it all over with a fork to prevent puffing.
  6. Brush the surface lightly with water or additional oil and sprinkle your chosen toppings (seeds, herbs, or flaky salt) over the top. Lightly roll over them with the rolling pin to press them in.
  7. Using a pizza cutter or sharp knife, score the dough into squares or rectangles.
  8. Slide the parchment paper onto the baking sheet. Bake for 12-15 minutes until the crackers are golden brown and crisp.
  9. Let cool completely on a wire rack to reach maximum crispness before breaking along the scored lines.
