Ingredients:

  • 2 cups (480ml) Whole Milk
  • ¾ cup (150g) Granulated White Sugar
  • 1 tbsp (14g) Unsalted Butter
  • 1 pinch Fine Sea Salt
  • ½ tsp Pure Vanilla Extract

Instructions:

  1. Pour 2 cups Whole Milk and ¾ cup Granulated Sugar into your heavy saucepan.
  2. Heat over medium low, stirring constantly until no grains are visible on the spatula.
  3. Increase heat slightly until small bubbles break the surface. Do not let it reach a rolling boil.
  4. Cook for 20 minutes, stirring occasionally to prevent sticking. Watch for the liquid to reduce by half.
  5. Remove from heat and stir in 1 tbsp Unsalted Butter and a pinch of salt. Whisk until the butter is fully integrated.
  6. Stir in ½ tsp Pure Vanilla Extract. The aroma should be sweet and floral.
  7. Pour the hot liquid through a fine mesh sieve into a glass jar.
  8. Let it sit at room temperature for 1 hour, then refrigerate. It will thicken significantly as it cools.
