  • ½ cup (115g) unsalted butter, chilled and cubed
  • 1 teaspoon granulated sugar
  • ¼ teaspoon salt
  • 6-8 tablespoons ice water
  • 1 cup (240g) fruit jam or curd (e.g., strawberry, raspberry, lemon)
  • 1 cup (120g) powdered sugar
  • 2 tablespoons milk (or water for a dairy-free option)
  • ½ teaspoon vanilla extract
  • Sprinkles (optional)

Instructions:

  1. In a bowl, combine flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, stirring until a dough forms; avoid overworking. Divide the dough in half, flatten into discs, and wrap in plastic wrap. Chill for at least 30 minutes.
  3. Choose your favorite jam or fruit curd.
  4. On a lightly floured surface, roll out one disc to about 1/8 inch thick. Cut into rectangles (about 3x5).
  5. Place half the rectangles on a baking sheet lined with parchment paper. Spoon a small amount of filling into the center of each rectangle. Top with the other half of the rectangles and seal the edges using a fork.
  6. Preheat the oven to 375°F (190°C). Bake for 20 minutes or until golden brown.
  7. While the pop tarts cool, mix the powdered sugar, milk, and vanilla to create the glaze. Drizzle the glaze over the cooled pop tarts and top with sprinkles if desired.
