- 2 cups (240g) all-purpose flour
- ½ cup (115g) unsalted butter, chilled and cubed
- 1 teaspoon granulated sugar
- ¼ teaspoon salt
- 6-8 tablespoons ice water
- 1 cup (240g) fruit jam or curd (e.g., strawberry, raspberry, lemon)
- 1 cup (120g) powdered sugar
- 2 tablespoons milk (or water for a dairy-free option)
- ½ teaspoon vanilla extract
- Sprinkles (optional)
Instructions:
- In a bowl, combine flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water, stirring until a dough forms; avoid overworking. Divide the dough in half, flatten into discs, and wrap in plastic wrap. Chill for at least 30 minutes.
- Choose your favorite jam or fruit curd.
- On a lightly floured surface, roll out one disc to about 1/8 inch thick. Cut into rectangles (about 3x5).
- Place half the rectangles on a baking sheet lined with parchment paper. Spoon a small amount of filling into the center of each rectangle. Top with the other half of the rectangles and seal the edges using a fork.
- Preheat the oven to 375°F (190°C). Bake for 20 minutes or until golden brown.
- While the pop tarts cool, mix the powdered sugar, milk, and vanilla to create the glaze. Drizzle the glaze over the cooled pop tarts and top with sprinkles if desired.
