Ingredients:

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 1/2 cup fruit jam or preserves or chocolate spread
  • 1 cup powdered sugar
  • 1-2 tablespoons milk or water
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions:

  1. In a mixing bowl, combine flour, salt, and sugar.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Shape into a disk, wrap in cling film, and chill for at least 30 minutes.
  5. Gather your desired filling while the dough chills.
  6. Preheat the oven to 350°F (180°C). Roll out the chilled dough on a floured surface to about 1/8-inch thick.
  7. Cut into rectangles (approximately 3x4 inches).
  8. Place a tablespoon of filling on half of the rectangles. Top each with another rectangle and seal edges with a fork.
  9. Cut vents in the top for steam to escape.
  10. Place assembled poptarts on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden brown.
  11. In a bowl, whisk powdered sugar with milk until smooth; add food coloring if desired.
  12. Drizzle icing over cooled poptarts and add sprinkles if using.
