Ingredients:
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup cold water
- 1/2 cup fruit jam or preserves or chocolate spread
- 1 cup powdered sugar
- 1-2 tablespoons milk or water
- Food coloring (optional)
- Sprinkles (optional)
Instructions:
- In a mixing bowl, combine flour, salt, and sugar.
- Cut in cold butter until mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
- Shape into a disk, wrap in cling film, and chill for at least 30 minutes.
- Gather your desired filling while the dough chills.
- Preheat the oven to 350°F (180°C). Roll out the chilled dough on a floured surface to about 1/8-inch thick.
- Cut into rectangles (approximately 3x4 inches).
- Place a tablespoon of filling on half of the rectangles. Top each with another rectangle and seal edges with a fork.
- Cut vents in the top for steam to escape.
- Place assembled poptarts on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden brown.
- In a bowl, whisk powdered sugar with milk until smooth; add food coloring if desired.
- Drizzle icing over cooled poptarts and add sprinkles if using.
