Ingredients:
- 3 lbs bone-in, skinless chicken thighs
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup BBQ sauce
- 1/2 cup honey
- 2 tbsp apple cider vinegar
- 3 cloves minced garlic
- 1 tbsp brown sugar
Instructions:
- Pat the chicken thighs dry with a paper towel. In a small bowl, mix the smoked paprika, garlic powder, salt, and pepper. Rub the mixture evenly over all sides of the chicken.
- Place the seasoned thighs in the bottom of the crockpot.
- In a separate bowl, whisk together the BBQ sauce, honey, apple cider vinegar, minced garlic, and brown sugar. Pour the glaze over the chicken, ensuring every piece is submerged.
- Set the slow cooker to LOW for 6–7 hours (or HIGH for 3–4 hours) until the chicken easily pulls away from the bone.
- Remove the chicken to a platter and discard the bones.
- Use two forks to shred the meat into bite-sized chunks. Pour the remaining thickened sauce from the crockpot back over the shredded meat.
