Ingredients:

  • 3 lbs bone-in, skinless chicken thighs
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup BBQ sauce
  • 1/2 cup honey
  • 2 tbsp apple cider vinegar
  • 3 cloves minced garlic
  • 1 tbsp brown sugar

Instructions:

  1. Pat the chicken thighs dry with a paper towel. In a small bowl, mix the smoked paprika, garlic powder, salt, and pepper. Rub the mixture evenly over all sides of the chicken.
  2. Place the seasoned thighs in the bottom of the crockpot.
  3. In a separate bowl, whisk together the BBQ sauce, honey, apple cider vinegar, minced garlic, and brown sugar. Pour the glaze over the chicken, ensuring every piece is submerged.
  4. Set the slow cooker to LOW for 6–7 hours (or HIGH for 3–4 hours) until the chicken easily pulls away from the bone.
  5. Remove the chicken to a platter and discard the bones.
  6. Use two forks to shred the meat into bite-sized chunks. Pour the remaining thickened sauce from the crockpot back over the shredded meat.
