Ingredients:
- 1 cup (340g) quality honey
- 2 tablespoons crushed red pepper flakes
- 1 tablespoon apple cider vinegar
Instructions:
- Prep the honey. Pour 1 cup (340g) quality honey into a small saucepan.
- Add the spice. Stir in 2 tablespoons crushed red pepper flakes.
- Heat the mixture. Set the burner to medium low and watch until the first small bubbles appear at the edges.
- Monitor the temperature. Keep the honey below 160°F (71°C).
- Simmer gently. Let the mixture sit on low heat for 3 minutes until the honey becomes fragrant and turns a darker amber.
- Infuse the acid. Remove the pan from the heat and stir in 1 tablespoon apple cider vinegar.
- Cool slightly. Let the mixture sit in the pan for 5 minutes until the sizzle stops and it begins to thicken.
- Strain (optional). Pour the honey through a fine mesh sieve if you want a clear liquid.
- Bottle it up. Transfer the warm honey into a clean glass jar.
- Set aside. Let it cool completely at room temperature before sealing the lid.
