Ingredients:

  • 1 cup (340g) quality honey
  • 2 tablespoons crushed red pepper flakes
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Prep the honey. Pour 1 cup (340g) quality honey into a small saucepan.
  2. Add the spice. Stir in 2 tablespoons crushed red pepper flakes.
  3. Heat the mixture. Set the burner to medium low and watch until the first small bubbles appear at the edges.
  4. Monitor the temperature. Keep the honey below 160°F (71°C).
  5. Simmer gently. Let the mixture sit on low heat for 3 minutes until the honey becomes fragrant and turns a darker amber.
  6. Infuse the acid. Remove the pan from the heat and stir in 1 tablespoon apple cider vinegar.
  7. Cool slightly. Let the mixture sit in the pan for 5 minutes until the sizzle stops and it begins to thicken.
  8. Strain (optional). Pour the honey through a fine mesh sieve if you want a clear liquid.
  9. Bottle it up. Transfer the warm honey into a clean glass jar.
  10. Set aside. Let it cool completely at room temperature before sealing the lid.
