Ingredients:

  • 2 lbs chicken wings, split into flats and drums
  • 2 tbsp neutral oil
  • 3 tbsp honey powder
  • 1 tbsp smoked paprika
  • 1 tsp cayenne pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Use paper towels to pat the chicken wings completely dry to ensure the skin crisps properly.
  2. In a small bowl, whisk together the honey powder, smoked paprika, and cayenne.
  3. In a large mixing bowl, drizzle the neutral oil over the dried wings and toss to coat evenly.
  4. Sprinkle the dry rub over the wings in three stages, tossing thoroughly between each addition until the wings are coated in a thick, mahogany-colored paste.
  5. Arrange the wings in a single layer on a wire rack set over a baking sheet, ensuring they do not touch.
  6. Bake for 35–40 minutes until the skin is tight and bubbling, and the rub has darkened into a rich, caramelized crust.
