Ingredients:

  • 1 pound dried pinto beans, rinsed and sorted
  • 6 cups water or vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 tablespoon olive oil
  • Salt to taste (add after cooking)
  • Fresh cilantro, chopped (for garnish, optional)
  • Lime wedges (for garnish, optional)

Instructions:

  1. Rinse the pinto beans under cold water and remove any debris.
  2. Set Instant Pot to Sauté mode. Add olive oil, chopped onion, and minced garlic. Cook until softened, about 3-4 minutes.
  3. Add the rinsed pinto beans, water or broth, cumin, smoked paprika, and cayenne (if using) to the pot. Stir to combine.
  4. Close the lid
  5. Once cooking is complete
  6. Open the lid, stir, and season with salt to taste. Serve as desired, garnished with cilantro and lime wedges if using.
