Ingredients:
- 1 pound dried pinto beans, rinsed and sorted
- 6 cups water or vegetable broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper (optional for heat)
- 1 tablespoon olive oil
- Salt to taste (add after cooking)
- Fresh cilantro, chopped (for garnish, optional)
- Lime wedges (for garnish, optional)
Instructions:
- Rinse the pinto beans under cold water and remove any debris.
- Set Instant Pot to Sauté mode. Add olive oil, chopped onion, and minced garlic. Cook until softened, about 3-4 minutes.
- Add the rinsed pinto beans, water or broth, cumin, smoked paprika, and cayenne (if using) to the pot. Stir to combine.
- Close the lid
- Once cooking is complete
- Open the lid, stir, and season with salt to taste. Serve as desired, garnished with cilantro and lime wedges if using.
