Ingredients:
- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1 teaspoon (5 g) vanilla extract
- 3 cups (360 g) all-purpose flour
- 1 teaspoon (5 g) baking powder
- ½ teaspoon (3 g) salt
- 2 tablespoons (25 g) granulated sugar for dusting
Instructions:
- In a bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Mix in the eggs, one at a time, and the vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes.
- Preheat your oven to 350°F (175°C).
- Roll the dough on a floured surface to about ¼ inch thick.
- Use a cookie cutter to cut the biscuits and place them on a prepared baking sheet.
- Sprinkle the tops with granulated sugar before baking.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Transfer to a wire rack to cool completely.
