Ingredients:

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5 g) vanilla extract
  • 3 cups (360 g) all-purpose flour
  • 1 teaspoon (5 g) baking powder
  • ½ teaspoon (3 g) salt
  • 2 tablespoons (25 g) granulated sugar for dusting

Instructions:

  1. In a bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
  2. Mix in the eggs, one at a time, and the vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  5. Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. Roll the dough on a floured surface to about ¼ inch thick.
  8. Use a cookie cutter to cut the biscuits and place them on a prepared baking sheet.
  9. Sprinkle the tops with granulated sugar before baking.
  10. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  11. Transfer to a wire rack to cool completely.
