Ingredients:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup buttermilk
- 1 tbsp lemon juice
- 3/4 cup blue cheese crumbles
- 1 small clove garlic, minced
- 1 tbsp chives, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Combine the mayonnaise, sour cream, buttermilk, and lemon juice in your mixing bowl. Note: Ensure all dairy is cold from the fridge.
- Whisk the base vigorously until the mixture is completely smooth and glossy.
- Using a rubber spatula, gently fold in the blue cheese crumbles and minced garlic. Note: Avoid over mixing here to keep the cheese chunks intact.
- Stir in the fresh chives with a few light turns of the spatula.
- Taste a small amount of the dressing first. Note: Blue cheese saltiness varies wildly by brand.
- Add salt and black pepper gradually until the flavors are balanced and sharp.
- Transfer the mixture to a glass jar or cover the bowl tightly.
- Refrigerate for at least 30 minutes until the dressing is chilled and thickened.
