Ingredients:
- 1 cup honey (340g)
- 1/4 cup apple cider vinegar (60ml)
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1.5 pounds chicken tenders (680g), trimmed
- 2 medium fresh apples (about 8 ounces/225g each), sliced (Gala or Honeycrisp recommended)
- 1 tablespoon olive oil (15ml)
- Fresh herbs (such as thyme or rosemary) for garnish (optional)
Instructions:
- In a mixing bowl, whisk together honey, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper.
- Place chicken tenders in a baking dish and pour half of the marinade over them. Cover and refrigerate for 30 minutes.
- In a skillet, heat olive oil over medium heat. Add sliced apples and sauté for 3-5 minutes until just softened. Remove and set aside.
- In the same skillet, heat the remaining marinade on medium-high heat until bubbling. Add marinated chicken tenders and cook for about 5-7 minutes per side, until golden brown and the internal temperature reaches 165°F (75°C).
- Return sautéed apples to the skillet and toss with the cooked tenders. Serve garnished with fresh herbs if desired.
