Ingredients:
- 3 lbs boneless, skinless chicken thighs
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 cup fresh lime juice
- 1 tbsp lime zest
- 1/2 cup fresh cilantro, chopped
- 1 tbsp avocado oil
Instructions:
- Place the diced onions and minced garlic at the bottom of the slow cooker.
- Rub the chicken thighs with salt, pepper, cumin, and smoked paprika until evenly coated, then lay them in a single layer over the aromatics.
- Pour the lime juice and avocado oil over the chicken.
- Cover and cook on LOW for 6 hours without opening the lid.
- Remove the tender chicken to a platter and shred the meat using two forks.
- Stir in the lime zest and chopped cilantro while the meat is still hot to release the essential oils.
