Ingredients:

  • 3 lbs boneless, skinless chicken thighs
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 1/2 cup fresh cilantro, chopped
  • 1 tbsp avocado oil

Instructions:

  1. Place the diced onions and minced garlic at the bottom of the slow cooker.
  2. Rub the chicken thighs with salt, pepper, cumin, and smoked paprika until evenly coated, then lay them in a single layer over the aromatics.
  3. Pour the lime juice and avocado oil over the chicken.
  4. Cover and cook on LOW for 6 hours without opening the lid.
  5. Remove the tender chicken to a platter and shred the meat using two forks.
  6. Stir in the lime zest and chopped cilantro while the meat is still hot to release the essential oils.
