Ingredients:

  • 1/2 lb lean ground turkey
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 2 cups riced cauliflower
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp avocado oil
  • 2 large organic eggs
  • 1 medium Hass avocado, sliced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp pickled jalapeños
  • 1/4 cup shredded sharp cheddar cheese

Instructions:

  1. Heat a large skillet over medium-high heat with avocado oil. Add the ground turkey, breaking it apart with a spatula.
  2. Sprinkle the smoked paprika, cumin, garlic powder, salt, and pepper over the meat. Cook for 3 minutes undisturbed to get a golden crust.
  3. Push the turkey to one side and add the diced red bell pepper and red onion. Cook until the onions soften.
  4. Stir in 2 cups riced cauliflower. Sauté 5 minutes until tender but not mushy.
  5. Use your spoon to make two small clearings in the mixture and crack the eggs into them.
  6. Reduce heat to medium, cover the pan, and cook 3 minutes until whites are opaque.
  7. Sprinkle 1/4 cup shredded cheddar over the bowl and let it melt.
  8. Top with sliced Hass avocado, cilantro, and pickled jalapeños.
