Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup semisweet or dark chocolate chips
- 2 tablespoons coconut oil
Instructions:
- In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, cocoa powder, vanilla extract, and salt until smooth.
- Pour the mixture into ice pop molds, leaving a small space at the top for expansion. Insert popsicle sticks into the molds.
- Place molds in the freezer and freeze for at least 2 hours, or until solid.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until smooth.
- Remove ice pops from the molds. Dip each pop in the melted chocolate coating, allowing excess chocolate to drip off.
- Place coated pops on a parchment-lined baking sheet and return to the freezer for about 10 minutes to set the coating.
- Enjoy immediately or store in an airtight container in the freezer for later.
