Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semisweet or dark chocolate chips
  • 2 tablespoons coconut oil

Instructions:

  1. In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, cocoa powder, vanilla extract, and salt until smooth.
  2. Pour the mixture into ice pop molds, leaving a small space at the top for expansion. Insert popsicle sticks into the molds.
  3. Place molds in the freezer and freeze for at least 2 hours, or until solid.
  4. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until smooth.
  5. Remove ice pops from the molds. Dip each pop in the melted chocolate coating, allowing excess chocolate to drip off.
  6. Place coated pops on a parchment-lined baking sheet and return to the freezer for about 10 minutes to set the coating.
  7. Enjoy immediately or store in an airtight container in the freezer for later.
