Ingredients:

  • 5 whole vanilla beans (preferably Grade A)
  • 1 cup (240 ml) of sugar (granulated or brown)
  • ½ cup (120 ml) of water
  • 2 tablespoons (30 ml) of corn syrup (optional, for added consistency)

Instructions:

  1. Using a sharp knife, slice each vanilla bean lengthwise to expose the seeds. Scrape the seeds into a small bowl and set aside.
  2. In a small saucepan, add the scraped vanilla beans, seeds, sugar, water, and corn syrup (if using).
  3. Place the saucepan over medium heat and stir until the sugar dissolves completely.
  4. Allow the mixture to simmer for about 2-3 minutes, stirring occasionally.
  5. Remove from heat and let it cool before transferring to a glass jar or container. Allow the paste to thicken as it cools, then seal tightly for storage.
