Ingredients:

  • 2 tbsp white miso paste
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 clove minced garlic
  • 2 salmon fillets (6 oz each)

Instructions:

  1. Pat the salmon fillets completely dry with a paper towel. Note: Wet fish won't char; it will steam.
  2. Season lightly with pepper. No need for extra salt since the miso is very salty.
  3. In a small bowl, whisk white miso paste, honey, soy sauce, rice vinegar, sesame oil, grated ginger, and minced garlic.
  4. Mix until the glaze is smooth and no miso lumps remain.
  5. Coat the salmon fillets generously with the glaze. Note: Cover the tops and sides, but leave the skin mostly clear.
  6. Preheat the air fryer to 360°F (182°C) and line the basket with parchment.
  7. Place the fillets skin side down in the basket.
  8. Cook for 8-12 minutes until the glaze reaches a deep mahogany colored char.
