Ingredients:

  • 3 ripe bananas, mashed (approx. 1 ½ cups or 360g)
  • 1/3 cup (80ml) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon ground cinnamon (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the cake pan with butter or non-stick spray.
  3. In a bowl, combine the mashed bananas and melted butter; mix well.
  4. Add sugar, egg, and vanilla extract; whisk until smooth.
  5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Gently fold the dry ingredients into the banana mixture until just combined.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
