Ingredients:

  • 500g fresh okra, trimmed and halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh lemon juice (optional, to taste)

Instructions:

  1. Rinse and dry the okra. Trim the ends and slice them in half lengthwise.
  2. In a large skillet over medium heat, heat the olive oil until shimmering.
  3. Add the minced garlic to the skillet. Sauté for 1-2 minutes until fragrant; be careful not to burn it.
  4. Toss in the okra halves and spread them evenly in the pan.
  5. Sprinkle with smoked paprika, ground cumin, salt, and pepper. Stir gently to coat.
  6. Sauté for 8-10 minutes, stirring occasionally, until the okra is tender and lightly browned.
  7. Taste for seasoning and add fresh lemon juice if desired. Serve hot.
