Ingredients:

  • 1 pound (454g) pecan halves
  • 1 large egg white
  • 1 tablespoon (15ml) water
  • 1 cup (200g) granulated sugar
  • 1 teaspoon (6g) ground cinnamon
  • 1/2 teaspoon (3g) ground nutmeg
  • 1/4 teaspoon (1.5g) ground cloves
  • 1 teaspoon (6g) sea salt

Instructions:

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the egg white and water until slightly frothy.
  3. In a separate bowl, whisk together the sugar, cinnamon, nutmeg, cloves, and salt.
  4. Add the pecans to the egg white mixture and stir until evenly coated.
  5. Sprinkle the spiced sugar mixture over the pecans, stirring constantly to ensure all pecans are thoroughly coated.
  6. Spread the coated pecans in a single layer on the prepared baking sheet.
  7. Bake for 45 minutes, stirring every 15 minutes to prevent burning and ensure even toasting. Look for a golden-brown colour and a dry, hardened coating.
  8. Remove from oven and let cool completely on the baking sheet. The coating will harden as they cool. Break apart any clumps before serving.
