Ingredients:
- 1 pound (454g) pecan halves
- 1 large egg white
- 1 tablespoon (15ml) water
- 1 cup (200g) granulated sugar
- 1 teaspoon (6g) ground cinnamon
- 1/2 teaspoon (3g) ground nutmeg
- 1/4 teaspoon (1.5g) ground cloves
- 1 teaspoon (6g) sea salt
Instructions:
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, whisk together the egg white and water until slightly frothy.
- In a separate bowl, whisk together the sugar, cinnamon, nutmeg, cloves, and salt.
- Add the pecans to the egg white mixture and stir until evenly coated.
- Sprinkle the spiced sugar mixture over the pecans, stirring constantly to ensure all pecans are thoroughly coated.
- Spread the coated pecans in a single layer on the prepared baking sheet.
- Bake for 45 minutes, stirring every 15 minutes to prevent burning and ensure even toasting. Look for a golden-brown colour and a dry, hardened coating.
- Remove from oven and let cool completely on the baking sheet. The coating will harden as they cool. Break apart any clumps before serving.
